Make it Monday [Beef and Broccoli]

Today I'd like to share with you a recipe that I found at Rainy Day Gal [the pin]. The first time I made this I knew it was an instant keeper. I'm not a big beef and broccoli fan but this was amazing! Naturally I've changed a couple of things but I'd love to share this recipe with you.

Ingredients

Marinate [for the meat]

1/2 tsp baking soda
1 tsp sugar
1 tbsp cornstarch
1 tbsp low-sodium soy sauce
1 tbsp water
2 tbsp vegetable oil
1 1/2lbs flank steak [sliced into thin strips]

Sauce
1/2 cup low-sodium soy sauce [do not use regular, its way to salty]
2 tbsp brown sugar
4 cloves minced garlic
2 tbsp flour
1 tbsp sherry
1 tbsp sriracha** [optional but highly recommend]

Other
3 tbsp vegetable oil
2 broccoli crowns [chopped]


Quinoa Side

1 cup uncooked Quinoa
2 cups low sodium beef stock


The meat needs to marinate for at least an hour, so you'll need to gather your ingredients and prep the meat.


Dry ingredients: Baking Soda, Sugar & Cornstarch

Add in the wet: Soy Sauce, Water & Vegetable Oil

After the meat is coated in the marinate I put it all in a zip lock and placed in the refrigerator.

Ready for the fridge


Once the meat has finished marinating [at least one hour] take it out of the refrigerator and set on the counter. You'll need to start on the quinoa. Measure out a cup of dry uncooked quinoa. You'll need to rinse the quinoa, I use a strainer and rinse over the sink.

After rinsing set aside and let the water continue draining from the quinoa

Place 2 cups of beef stock [low sodium if store bought or homemade] in a sauce pan and bring to a boil. Once the stock is boiling add in rinsed quinoa.

Quinoa Cooking

Cover and simmer for about 20 minutes total.

After the quinoa has been simmering for about 10 minutes you'll need to start on the main dish. In a small bowl stir together: soy sauce, brown sugar, garlic, flour, sherry and sriracha. Set this aside.

Take 2 tbsp of the vegetable oil and heat in a large saute pan until the oil is shimmering, add broccoli and saute for 3 minutes. Make sure to stir the broccoli often. After the 3 minutes transfer it to a plate. [my pictures of this step did not come out, sorry for that]

Next place the same pan back over the heat and carefully add the last tablespoon of oil the the hot pan. Add the marinated meat of half of the sauce mixture.



Saute the meat in half of the sauce


Saute the meat and the sauce for about 3-4 minutes, stirring often, until the meat is cook through [not pink]. Then add the broccoli and the remaining sauce. Saute together for another minute.


YUMMY


Surve the beef and broccoli over your cooked quinoa. Add more sriracha as needed :)
