Ingrediants
1 1/3 cup Flour
1 tsp Baking Soda
2 tbsp Sugar
1 tsp Salt
1 Egg
1 cup Milk
2 tbsp Melted Butter
1/3 cup diced apples
Juice from a 1/2 Lemon
Handful of Blueberries
In a small bowl mix the milk and the lemon juice, set aside while you gather the rest of the ingredients. In a large bowl mix together the four, baking soda, sugar and salt. Once those are combined add the lemon/milk mix, egg, and melted butter.
Stir together until your batter forms, add in your diced apples.
After you add your apples use a 1/4 cup to measure out batter. Pour onto hot non stick pan, then add a few blueberries. I like to add about 5 each pancake.
Cook a couple minutes each side until golden.
Now for the real test.... the twins!
I don't give them butter or syrup, so a good tasting pancake dry is VERY important, if they don't like them they will end up on the floor. I waited a minute then gave them to my toughest critics...
They LOVED them!
I served them to myself with a little butter and syrup and I loved them too! The blueberries are a little sweet and the apple gives the pancake a little texture that is just delicious.
