We found ourselves eating almost all of it, good thing its not really bread!
I found the recipe over at Mama Grubbs Grub [the pin] but naturally I've changed it a little.
Ingredients:
1/2 Head of Cauliflower, grated
1 whole egg, plus one egg white lightly beaten
1/4 cup mozzarella cheese shredded
1 tsp olive oil
1 tbsp minced garlic
1/2 tsp of each: basil, oregano, parsley, paprika
grated parmesan cheese
Preheat your oven 350.
First you'll need to grate your 1/2 head of cauliflower. I've read about others using a food processor but to me thats just too many parts [dishes to clean]...
When I grate the cauliflower I stop once I get to the stock, little bit of stock is good but I prefer the flower part.
In a medium sized bowl combine the eggs, mozzarella cheese, garlic, spices and grated cauliflower.
Line your baking sheet with parchment paper, then grease the paper with the olive oil.
Pour the cauliflower mixture on paper, use the back of a spoon to form into a square or rectangle shape about 1/2 inch thick or less.
Place in oven and bake for about 40 minutes, it should look a little dried out.
Next you'll need to flip it, I used another baking sheet and flipped in one motion.
Before placing back in the oven I sprinkled with a touch more mozzarella cheese and parmesan cheese. Cook for another 10 minutes.
Serve with marinara or spaghetti sauce. I served this as a side dish to our spaghetti squash dinner. :)

I have had Cauliflower bread at a local restaurant and loved it! I have never actually seen a recipe for it so this is awesome!
