I've been on a diet for a little over a month and so far things are going great! I'm on track to reach my goal and I've been working out like crazy. I do however still have cravings for sweets; mostly chocolate. The hardest part about dieting has been Pinterest!!
All of those yummy recipes just call out to me. Well lucky for me I found one that I can eat and not feel super guilty about. I've discovered a blogger [love it when that happens], her name is Katie and her blog is Chocolate Covered Katie. I'm her new biggest fan!
Anyway I found this recipe for her Cookie Dough Dip and today I'm sharing it with you.
She shares a few variations on her blog, I'm sharing with you the way I made it.
Skinny Cookie Dough Dip
Ingredients
1 Can of Chickpeas [low sodium]
1/8 tsp salt
1/8 tsp baking soda
2 tsp vanilla extract
1/4 Unsweetned Vanilla Almond Milk
3 tbsp Chocolate Chips
2 tbsp Rolled Oats
1 tbsp Flax seeds
10 Almonds [raw]
3 tbsp brown sugar
You'll need to drain and rinse your can of chickpeas. Set aside while you grind your Rolled Oats, Flax Seeds & Almonds. I used my baby bullet millet blade to make them into a powder.
I then combined all of the ingredients [everything but the chocolate chips] in my food processor.
I made sure to add the milk in slowly as the "dough" was forming.
After "dough" texture formed I added the chocolate chips and just stirred to mix those in.
I divided the dough into 1/2 cup tupperware containers; put one in the fridge and the rest in the freezer. This way when I get a snack attack I can have some cookie dough!!!
I personally just eat this with a spoon, but you can dip graham crackers, fruit or whatever else your heart desires!
Note about the taste... this is basically a dessert hummus so if you are not a fan of hummus I wouldn't recommend eating this. I personally have been on a diet long enough that this snack does the trick for my horrible sweet tooth.
