Today I'm sharing a new recipe that I tried out and loved! Its tasty and on the healthier side; two things that are important these days!
The twins loved it too!
[note: I promise the next time I make this I'll take better pictures, sometimes its just too dark in my kitchen to get good photos]
This is a new spin on a cornflake crusted chicken... I don't have a source for the original recipe because I've made it so many times its just in my head :)
Ingredients
Chicken Breast [boneless & skinless]
1 cup Rice Krispies Cereal, crushed [I used gluten free brown rice kind]
1/2 cup Non fat greek yogurt
1/4 cup Non fat milk [I used almond milk]
1/3 of a Ranch Seasoning packet
1 tsp pepper
1 tsp paprika
Pam
Small amount of Olive Oil
Preheat oven to 350.
Start by spraying your baking dish with Pam.
Next combine your milk and greek yogurt in a small bowl. In a large shallow dish, I used a pie dish, combine the crushed cereal, pepper, paprika and ranch.
Set up dredging station:
Start by coating chicken breast in yogurt, then dredge in ranch cereal mix. Coat all of your chicken pieces.
Place all of your chicken in dish.
I dont have an olive oil spray so I just improvised and used a pastry brush and dripped a little bit of oil on top of the chicken.
Bake in oven for about an hour.
Then enjoy!!!
The chicken is moist and delicious just a hint of ranch flavor goodness. Yum Yum!
