Like us, I bet most people have left over corned beef from yesterday, so today I'm sharing two of my favorite ways to enjoy those leftovers!
Ruben Panini's and Corned Beef & Hash
Ruben Panini [Makes 2 Panini's]
Ingredients
corned beef [about 5 slices per panini]
2 tbsp melted butter
1 clove of garlic minced
2 tbsp thousand island dressing
1 cup sauerkraut
3 slices swiss cheese
4 slices of rye bread
Panini Press [or George Foreman Grill like I used]
Add the garlic to your dish of melted butter, then brush all four pieces of bread with garlic butter. Turn the bread over and spread the thousand island dressing on all four pieces.. Next add your cheese, beef & sauerkraut. Move to panini press and add top slice of bread. Close press and wait until the light says its done.

Corned Beef & Hash [serves 3]
Ingredients
corned beef [about 6 slices cubed]
salt & pepper
2 tbsp vegetable oil
2 russet potatoes [cubed]
1 yellow & green bell pepper [cubed]
1 jalapeno [cubed- optional]
2 eggs per person
In a large skillet heat oil until it shimmers, add cubed potatoes. Season with salt & pepper; cook throughly [about 10-15 minutes]. Once they are cooked add onion & pepper mix. Stir around until onions start to become translucent; add corned beef.
Stir to combine and reduce heat to low. In a small omelet pan cook two eggs over easy [or to your liking].
After the eggs are done [your way] turn off the heat and serve the eggs on top of your hash.
Devour & Enjoy!
