When I served this for dinner my husband said it was a restaurant quality meal. A huge compliment!
How to make it:
Ingredients: [makes 4 wraps]
Steak Marinade
1 lb of flank steak
1 tbsp Minced Garlic
2 tbsp Olive Oil
Salt & Pepper
Wraps
4 Flatout Wraps [or your favorite brand of wrap]
4 oz of Goat Cheese [about 1 oz each wrap]
1 tsp Minced Garlic
1 cup Cooked Quinoa
Salt & Pepper to taste
1 tbsp Balsamic Glaze
1 tbsp Olive Oil
Summer Squash
Red Onion
Mushrooms
Bell Peppers
Eggplant
Spinach [I did not sauté my spinach but you can]
About an hour before you start cooking marinate the Flank Steak.
Directions:
Grill the flank steak for about 3 minutes each side [depending on thickness]. While the steak is on the BBQ, heat olive oil in a large sauté pan add onions, mushrooms and garlic sauté for a a few minutes then add the rest of your vegetables. Salt & Pepper to taste.
Once vegetables are cooked add balsamic glaze stir to coat entire pan. Remove from heat.
When meat is finished cooking, let it rest for about 4 minutes. While its resting brush a little of the balsamic glaze on it.

Add cooked Quinoa & Steak
Then add Balsamic Vegetables
Top with Fresh Spinach and then wrap it up...
