I paired this with an IPA Beer and some potato chips.
We sure enjoy Sunday Football during nap time :)
Ingredients [makes 2 sandwiches]
1 Grilled Pesto Chicken breast
4 Slices of provolone cheese
8 Slices of Spicy Capicola Deli Meat
1/4 cup pesto
4 Slices of Sourdough Bread
Couple Tbsp soften butter
We don't have a Panini Press in our house but we do have our George Foreman and let me tell you it works great for making Panini's!
I started out by grilling the chicken breast on the George Foreman. I brushed it with a little pesto before I grilled it.
The chicken will only takes a few minutes. Slice chicken into strips.
Once the chicken is cooked you are ready for Panini assembly!
Step 1: Starting with the bread spread softened butter on one side [of all slices] and pesto sauce on the other. The butter side is for the "panini grill'.
Step 2: Layer chicken, capicola and provolone between pesto sides of bread.
Step 3: Place in Panini Press and warm until bread is crispy and the cheese is melted.
